Preheat oven to 425˚ F. Spread pizza dough over a greased 8-inch x 10-inch cookie sheet. Bake for 8 minutes. Reserve.
Meanwhile, preheat grill. Season the chicken breast with salt and pepper, then brush with oil. Grill chicken for 5 minutes per side or until an internal temperature of 165˚ F is reached. Allow time to chill then slice into ½-inch strips. Reserve.
Spread ½ cup of BBQ sauce evenly over the par-baked pizza crust.
Top with shredded Mozzarella cheese, shredded Gouda cheese, caramelized red onions and sliced chicken breast. Bake for 10 minutes or until cheese is melted. Drizzle with remaining ¼ cup of BBQ sauce and top with fresh cilantro leaves.
