Chicken Bruschetta Quinoa Bowls 

What's better than fresh bruschetta? Chicken bruschetta in a bowl! Packed with fresh ingredients, this quick recipe makes the perfect healthy lunch or dinner.


  • 2 cups quinoa
  • 3 cups water
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Bruschetta
  • 2-3 cups chopped tomatoes
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 3-4 chopped basil leaves
  • 1 tbsp balsamic vinegar
  • 1 tsp salt and pepper
  • Bruschetta Bowls
  • 1 rotisserie chicken, shredded
  • 2 zucchini, chopped
  • 1 Crystal Farms Finely Shredded Mozzarella Cheese
  • 1 tsp balsamic glaze
  • 1-2 basil leaves garnish


  • Rinse quinoa. Add rinsed quinoa to water and add seasonings.
  • Cook quinoa. If you are cooking your quinoa in your pressure cooker, you will want to cook it on high pressure for 1 minute. You can also cook the quinoa on your stove.
  • Prepare the bruschetta. In a bowl mix chopped tomatoes, basil, balsamic vinegar, olive oil, salt, and pepper. Set aside.
  • Chop zucchini and cut chicken off of your rotisserie chicken.
  • Build your bowls. Add a few scoops of quinoa, tomato bruschetta mixture, zucchini and chicken to your bowl. Top your bowls with Crystal Farm® Shredded Mozzarella Cheese, some extra basil, and balsamic glaze.
