This meatloaf is filled with cheese, caramelized onions, ketchup, yellow mustard and topped with a sweet ketchup glaze. A true homemade comfort food made simple thanks to your slow cooker!
In a large mixing bowl, combine ground beef, caramelized onions, peppers, eggs, breadcrumbs, salt and pepper. Mix well.
In a separate bowl, combine mustard and ketchup. Add half of mixture to the beef mix and reserve other half.
Add half of the beef mixture to the slow cooker, leaving a gap in the middle like a boat. Fill this gap with shredded Swiss cheese, and top with the remaining beef mixture.
Add mushrooms around the sides and over the top of the meatloaf in the slow cooker.
Cook meatloaf on high for 2 ½-3 hours until internal temperature reaches 165° F.
Turn to low and top with remaining ketchup mix. Let the meatloaf cook for another hour to slightly caramelize the glaze.
