Sweet Pea Wild Rice Salad

Sweet early peas, crisp celery, colorful carrots, scallions, olives and cheese are tossed with wild rice and tasty Teriyaki-style dressing in this salad recipe. Serve as a main dish or side.


  • 2 cups cooked wild rice
  • 1 package(9 oz) frozen peas, thawed
  • 1 cup sliced celery
  • 3 scallions, sliced
  • 2/3 cup shredded carrots
  • 1/2 cup yellow bell peppers, diced
  • 1 cup Crystal Farms Shredded Swiss Cheese
  • 6 large green olives, chopped
  • 1/2 cup low-fat mayonnaise
  • 2 tbsps Teriyaki Stir Fry Sauce
  • to taste salt and pepper


  • In large bowl, toss shredded Swiss cheese and salad ingredients.
  • Add dressing; toss.
  • Cover and refrigerate 1 hour prior to serving.
