Tortilla Casserole

Sure to be a family favorite, crispy tortilla chips are layered in a casserole dish and topped with shredded turkey, chipotle tomato salsa, black beans, roasted corn, sour cream, and cheddar cheese.


  • 12 oz tortilla chips
  • 2 cups chipotle salsa
  • 1 can (10 oz) black beans, drained and rinsed
  • 2 ears roasted corn
  • 1 1/2 cups leftover turkey, shredded
  • 1 1/2 cups Crystal Farms Shredded Cheddar Cheese
  • 1 1/2 cups sour cream
  • 1/2 cup sliced scallions

  • Preheat oven to 350˚ F.
  • In a 3-quart casserole dish, layer tortilla chips, chipotle salsa, black beans, roasted corn and shredded turkey.
  • Top with shredded Cheddar cheese and bake for 15-20 minutes or until hot and cheese is melted.
  • Top with sour cream and sliced scallions.
  • For best results, layer chips and salsa in a few alternating layers.
