Veggie Fajita Quesadillas

When you can’t choose between Fajitas and Quesadillas…¿Porque no los dos? (Translation: why not both?)


  • 1 tbsp olive oil
  • 1/2 each medium red, green, orange and yellow sweet bell peppers, sliced
  • 1 medium white onion, sliced
  • 1 tbsp fajita seasoning mix
  • 2 10-inch flour tortillas
  • 2 cups Crystal Farms Shredded Quesadilla


  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add peppers and onions and sprinkle with fajita seasoning. Mix together and sauté until semitender and a little browned, about 5-7 minutes. Remove from heat and set aside.
  • Preheat large skillet on medium heat. Spray one side of each tortilla with cooking spray and place sprayed side down in the skillet. Layer half of tortilla with half of the fajita vegetable mixture and sprinkle with 1 cup of cheese. Fold unfilled tortilla half over and cook 3-4 minutes per side or until cheese melts and tortillas are toasted. Repeat with remaining tortilla and filling.
  • Cut each quesadilla into three wedges. Serve with salsa, sour cream and cilantro if desired.

Chef's Tips & Suggestions: 

  • In lieu of prepared fajita seasoning mix the following may be substituted:
    Combine the following for fajita seasoning:
    • 1/2 tsp chili powder
    • 1/2 tsp ground cumin
    • 1/2 tsp paprika
    • 1 tsp garlic powder
    • 1 tsp salt
    • 1/2 tsp cayenne pepper (optional)
