Step 1
Ingredients
8 Tbsp
Unsalted Butter Quarters
2 cloves
garlic, minced
1 ½ cups
heavy cream
1 tsp
salt
½ tsp
pepper
3 ½ pounds
russet potatoes peeled and sliced into 1/8-inch slices
1 cup +
2 Tbsp
White Sharp Cheddar Shredded Cheese
1 cup +
2 Tbsp
Mozzarella Shredded Cheese
¼ cup
Grated Parmesan Shaker – 8 oz.
Finely chopped fresh chives, for garnish
Instructions
Preheat oven to 375˚F. Using 2 tablespoons of butter, grease a baking dish (9 x 13).
In a 3 qt saucepan over medium-low heat, melt 6 tablespoons of butter. Add the garlic and cook, stirring frequently about a minute. Add the cream. Bring to a gentle simmer and cook uncovered until reduced by 1/3 (about 12-14 minutes). Stir in the salt and pepper. Remove from heat.
In a large mixing bowl, combine the sliced potatoes, cream, shredded white cheddar, and mozzarella. Transfer to the baking dish, top with 2 tablespoons each of mozzarella & white cheddar, cover with foil, and bake for 45 minutes.
Remove the foil. Top with parmesan cheese and continue baking uncovered until the potatoes are tender and cheese is nicely browned, about 30 minutes longer. Rest 5 minutes. Top with chives and serve.
