Ingredients

broccoli florets

butter

small onion (finely diced)

carrots (shredded or finely diced)
3 Tbsp
all-purpose flour
2 ½ cups
chicken or vegetable broth
2 cups
whole milk (or half-and-half for creamier soup)
1 cup
Sharp Cheddar Cheese
1 cup
Marble Jack Cheese
1 cup
Mozzarella Cheese
Salt and pepper to taste
Instructions
In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and shredded carrot. Sauté for 3-4 minutes until softened.
Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
Gradually whisk in the chicken or vegetable broth, ensuring no lumps form. Stir in the milk and bring the mixture to a gentle simmer.
Add the chopped broccoli florets to the pot. Reduce the heat to medium-low and let the soup simmer for 10-15 minutes until the broccoli is tender.
Reduce the heat to low. Gradually stir in the shredded sharp cheddar, marble jack, and mozzarella cheeses. Stir constantly to ensure the cheese melts smoothly.
Taste and adjust the seasoning with salt and pepper. If you want a touch of spice, add a pinch of smoked paprika or cayenne.
